Santa Domenica is the micro-roastery founded in 2023 in Diso, in the province of Lecce, by Francesca Surano — a specialty coffee trainer with twenty years of international experience. The name comes from the Salentino dialect: "Santa Duminica" is the exclamation that escapes when you finally take a well-earned break. It is also a tribute to Francesca's grandmother, a woman of the land whose life of labour grounds the entire project.
The supply chain is radically transparent: every bag carries the farmer's name. The coffee is grown partly at Umami Area, a farm Francesca co-founded in Honduras in 2017 across 45 hectares at over 1,100 metres above sea level, and partly by personally selected partner producers. The green beans travel by sea to Salento, where they are roasted in small batches. Santa Domenica is Filiera's coffee.
