Giuseppe Battocchio tends his vegetable gardens — known as "Gli Orti di Peppe" — practising aridoculture: a technique that completely excludes artificial irrigation, entrusting plant growth entirely to natural rainfall. It is a demanding choice, requiring careful variety selection, an attentive reading of soil and climate, and a complete refusal of any productive shortcut.
Production follows the seasons and includes varieties rooted in the local territory: Lecce tomatoes, Senatore Cappelli wheat, sweet potatoes, courgettes with their flowers, and Romanesco broccoli.
