Cutrofiano (LE)
Li sciacuddhri is the artisan dairy run by Antonio Ligori and Mariangela Maselli in the countryside of Cutrofiano, between Aradeo and Copertino, in the heart of deep Salento. The name refers to the "sciacuddri" of Salentino folklore — the Greco-Salentino sprite who, according to tradition, roams the stables at night caring for the animals. An identity that precisely reflects the devotion with which the two producers tend their flock of ninety Sardinian sheep.
The work starts with a deliberate choice of restraint: milk from the same day, strict seasonality, and no external raw materials whatsoever. In summer only cacioricotta is produced — the Puglian PAT cheese with its hybrid coagulation method; the rest of the year brings primosale, giuncata, ricotta, and aged pecorino. The farm is part of the Salento Km0 network and participates in the WWOOF programme, having hosted over fifty young people from around the world over five years.
