An ancient wood-fired oven in the historic centre of Casarano. Breads and baked goods handcrafted with local heritage grains such as Senatore Cappelli and Tumminia, stone-ground and leavened exclusively with sourdough starter.
The bakery carries forward a centuries-old Salentine tradition, combining ancient methods with rediscovered native grains. Every loaf is the product of long, unhurried fermentation — governed by the starter, not by production targets.
