Family-run farm with cattle breeding at Gagliano del Capo, at the southernmost tip of Salento. It produces fresh pasteurised milk, fresh and aged artisan cheeses and yogurt, keeping the supply chain as short as possible between the barn and the counter.

Animal welfare and raw material quality are at the heart of every production decision: the cows graze on local pastures and feeding follows the rhythms of the local seasons. La Lattoria has supplied Filiera Café for years, representing a concrete example of local, zero-kilometre economy.
